Brown Rice Spaghetti with Roasted Tomatoes

We finally introduced tomatoes into our diet! I will be completely honest, I don't like tomatoes. Especially raw. I usually pick them out of everything. So I wanted to find a way that I could enjoy them along with my husband. Roasting is the answer! I have to admit I didn't think I would like tomatoes in any form...but I was wrong! They are so tasty roasted with garlic and add great flavour to this brown rice spaghetti dish. Using fresh, roasted tomatoes is a great and healthy alternative to using store-bought pasta sauces. Hope you enjoy!





Ingredients (for 2 people)

  • 1 cup of fresh cherry tomatoes (I used Village Farms)

  • 2 tsp olive oil

  • 1 tsp of chopped garlic

  • 1/4 tsp of salt

  • 1/4 tsp of black pepper

  • 1/3 of Brown Rice Spaghetti package (I used Pasta Joy Ready)

  • 1 tsp Herbamare

  • 1/2 tsp dried basil

  • 1/2 tsp of garlic powder

  • A handful of spinach

  • 1 cup of grilled chicken strips


  1. Preheat oven to 400 degrees celsius

  2. Wash tomatoes and toss in 1 tsp of olive oil, chopped garlic, salt and pepper

  3. Roast tomatoes on a baking sheet in the oven for 20-25 mins until they start to burst

  4. When finished remove tomatoes from the oven and set aside

  5. Boil pasta according to directions with 1 tsp of salt in the water

  6. Ensure pasta is cooked through (15-17 mins)

  7. Rinse pasta with cold water in the strainer and then coat with the other 1 tsp olive oil, herbamare, dried basil, and garlic powder. This adds flavour to the pasta since we are not coating it in a sauce

  8. Add spaghetti to plates and top with spinach, grilled chicken strips and roasted tomatoes

  9. Enjoy!


I like to heat grilled chicken strips in a pan to get them hot and a bit crisp before adding them to the dish.

Follow the directions on the package for your brown rice spaghetti. I find that different brands have different cooking times and you want to ensure that your pasta is cooked through.
