Strawberry Chia Seed Jam

February 25, 2018

This jam is so easy to make and so delicious! It's defintely worth trying. I was amazed that I could make a jam without gelatine, preservatives and processed sugars! Lately I have been incorporating superfoods in my diet and chia seeds are one of them. I personally love chia seeds, they are packed with essential fatty acids (especially Omega-3) , protein, vitamins and minerals and they can be used in a variety of ways. I will be posting later on a few ways that I use chia seeds in my diet! For the meantime, enjoy this recipe for chia seed jam with a slice of Coconut Flour Bread!

Strawberry Chia Seed Jam

  • 2 cups of washed strawberries (cut in half)

  • 1 tbsp lemon juice

  • 2 tbsp of raw Manuka honey

  • 2 tbsp of chia seeds

  1. Cook strawberries in a medium saucepan until the fruit starts to break down and become syrup, for about 5-10 mins stirring with a spatula every 1-2 minutes

  2. If you prefer a smoother jam, mash some of the strawberries with the back of the spatula or leave it as lumpy as you want

  3. Remove from heat and add honey and lemon juice mixing it all together

  4. Taste to ensure you have the right amount of sweetness add more honey or lemon juice to your preferred taste

  5. Stir in chia seeds

  6. Let it stand for 5 minutes to thicken. You will see the jam firm up and taking on a thicker consistency. If after 10 mins the jam is not as thick as you would like it to be, stir in another 1 tsp of chia seeds

  7. Transfer to mason jar for storage

  8. Enjoy! (On Coconut Flour Bread)

If you don't like honey for sweetening you can also use agave, maple syrup or sugar.

Jam can be stored in the fridge for 2 weeks or in the freezer for 3 months
